 | | 1 tsp | Baking Powder (alum free) |  | | 1/2 tsp | Baking Soda dissolved in 1/2 tbsp warm water |  | | 2 | Eggs, Organic |  | | 1 cup | Mashed ripe bananas |  | | 1/2 cup | Organic Shortening |  | | 1 cup | Organic Sugar |  | | 1/2 tsp | Sea Salt |  | | 1 1/2 cups | Unbleached Cake & Pastry Flour, Organic |  | | 1 tsp | Vanilla |  |

| Instructions: | Cream the shortening Add sugar gradually and continue to beat until fluffy. Add beaten eggs and vanilla and beat again. Sift the flour, measure and add salt and baking powder. Sift again. (sifting give consistency to the flour) Add dry ingredients alternatley with water and soda and mashed bananas. Mix thoroughly and fill greased cupcake or muffin pans 2/3 full. Preheat oven and Bake at 375F for 20 minutes. Makes 20-24 medium sized muffins. |
