 | | 1 tsp | Baking Soda |  | | 1 cup | Dark Molasses |  | | 1 tsp | Ginger |  | | 3 1/2 cups | Hard Unbleached Flour, Organic |  | | 1/2 cup | Organic Shortening |  | | 1/4 cup | Organic Sugar |  | | 1/4 tsp | Sea Salt |  | | 1/4 cup | Water |  |

| Instructions: | Combine molasses, sugar, and water and cook together slowly for 15 minutes. Just before removing from heat, add organic shortening and ginger. Stir until shortening is melted. Cool mixture and add soda, salt, and flour which have been sifted together for light consistency. Mix ingredients thoroughly. The dough should be very stiff. Chill the dough in the refridgerator for several hours. Turn out dough in a lightly floured board and roll as thin as possible. Cut with a round or heart shaped cookie cutter and place 1/2 inch apart on a greased cookie sheet Bake at 375F until crisp and golden brown. Makes 4 dozen cookies These cookies will improve if allowed to ripen in a stone jar for several weeks.
