 | | 1/2 tsp | Baking Powder |  | | 2 tsp | Baking Soda |  | | 1/2 cup | Cane Sugar |  | | 1 cup | Chocolate Chips |  | | 2 | Eggs |  | | 1/2 cup | Flax Seed, Organic |  | | 1/2 cup | Flax Seeds - fresh ground |  | | 1 1/2 cups | Kefir or Buttermilk |  | | 1/4 cup | Melted Butter or Almond Oil |  | | 1 tsp | Pure vanilla extract |  | | 1/2 tsp | Sea salt |  | | 2 cups | Unbleached Cake & Pastry Flour, Organic |  |

| Instructions: | Soak whole flax seeds in Kefir for 2 hours. Preheat oven to 380F
In a large bowl mix flour, flax meal, dried can sugar, baking powder, baking soda and salt.
In another bowl beat the eggs and combine with the almond oil, vanilla and kefir soaked flax.
Add the liquid ingredients to the dry ingredients and gently stir until smooth.
Fold in the chocolate chips.
Pour the batter into 16 medium muffin cups to 3/4 full. Bake for 20 minutes.
Let cool on a rack before serving. |
